As many of my friends know, I ABSOLUTELY ADORE MERINGUES. So when our teacher assigned my class a project, I just had to make them. The four flavors I used were peppermint, almond, rose and plain. This recipe makes around one hundred meringue kisses.
These are the ingredients you are going to need:
6 egg whites
1 1/2 cups of sugar
1/4 teaspoon cream of tartar
1 teaspoon of vanilla
3 extracts – rose, almond, and peppermint
3 food colorings – pink, blue, purple
To begin, preset the oven to 225 degrees and line three baking sheets with aluminum foil.
Whisk the egg whites until they are completely foamy.
When they are foamy, continue beating but add in the vanilla and cream of tartar. Next, add in the sugar one teaspoon at a time, whisking for 30 seconds between additions (I know this takes some time but it is worth it in the end!) After all the sugar has been added, continue to beat until the mixture is stiff and glossy (but not dry).
Spoon the mixture equally into four separate, medium-sized bowls (this step gets really messy) Set both the flavors and colors next to each of the bowls so you don’t get them confused. Then dip the end of a toothpick into the pink food coloring (I am using this color for example) and combine it with one of the mixtures in the bowls. As a side note, you can add as much of this color as you want using the same toothpick. Next, add a drop of the extracts (make sure it is only a drop) into the meringue mixture and blend it completely in. Repeat these steps three more times, leaving one portion plain.
Place each mixture into four different pastry bags fitted with a 1/2 inch star tip and pipe out small meringue kisses, about 1 1/2 inches in size, leaving 1 inch spaces between each.
Reduce the oven temperature to 200 degrees and bake for 1 1/2 to 2 hours until the meringues are completely dry and can be lifted from the tinfoil.
Finally, move the kisses to a drying rack and store them in a cool, dry place before eating! If you end up making these delicious treats, leave pictures and comments below our post.
